Aging:

   The Aging process is important for some categories of Sprits. Whiskey is one of them, white oak barrels are prepared for the liquor to be placed in for years at a time. White oak allows for water to be soaked into the sides of the barrel. The inside of the barrels is burned to allow the ethanol to become soaked into the wood as well. The pore sizes are the wood increase in size after burning to allow larger molecules than water to become soaked into the wood and get some of the flavorings from the barrel’s wood. The same is done for making darker shades of rum. White rum is just before aging it, and it gets darker after aging it for a few years. Volka and many other spirits don’t require any aging after they are distilled and cleaned up. They can be aged if your trying to go for a unique flavor combination. In that case, aging your spirit would be recommended.
